I discovered this recipe while searching through all of my grandma's recipes. I found this recipe in her "Weight Watcher's" collection. I can't really tell how old it is, but it looks interesting. Her recipe is written for beef steaks, but I'm adapting it for chicken.
Coffee Citrus Chicken
Makes 6 servings
2 teaspoons instant coffee/espresso
2 ½ tablespoons boiling water
¼ cup plus 2 tablespoons frozen orange juice concentrate
1 tablespoon dried onions
½ tablespoon salt
½ tablespoon lemon juice
Dash ground cloves
Dash hot sauce
6 boneless, skinless chicken breasts
In a small bowl, dissolve coffee in water. Add orange juice, dried onions, salt, lemon juice, cloves and hot sauce. Place chicken in a plastic bag. Reserve and refrigerate 6 tablespoons of the marinade. Add the remaining marinade, press out air and seal the bag. Marinate in the refrigerator for 6 to 8 hours or overnight, turning at least once. Preheat the oven to 375 degrees. Bake the chicken until the juices run clear.
